It’s sometimes good to have a Lunch/Breakfast at 1PM.
I made Egg Pizza.
I toasted flat bread with a very light coating of olive oil. Cracked a few fresh eggs and made them scrambled. Why not more eggs? Well, because in the mix I tossed some ham and veggies (sweet green peppers and onions, very finely diced)
Everything was served onto the flat bread. I put ‘metly’ cheese on top. And put into the broiler for a few minutes to make it nice.
This is a great “wake-me-up” for those days that sort of pass you by.
